Gilly and its famous thistles
Le Bourg-d’Oisans
It takes incredible patience to create this famous product from A to Z chocolate thistle. The chocolatier must trap the liquid alcohol in a sugar core covered with a chocolate shell: a feat that requires real know-how. These starch imprints are made on site to collect the chosen brandy and mixed with the sugar syrup. Once crystallized, the balls are dipped several times in cocoa baths for coating, then to make peaks. An authentic explosion of flavors with génépi, Chartreuse, pear, raspberry or rum.
Salazard, the 800
Le Bourg-d’Oisans
The chocolate specialty of the bakery and pastry shop Salazar has the same name as our magazine, the 800, in reference to the inhabitants of Oisans. A pastry that can be devoured in a flash! This one is inspired by the traditional chocolate éclair: choux pastry, pastry cream and icing, all made with Valrhona chocolate. An explosion in the mouth that you absolutely have to try! And if you still have a little room, try the walnut triangle, a walnut-based cake (inspired by a German recipe using hazelnuts and almonds) coated in chocolate. Simply amazing!
With Bologna bread, Oisans Sun and chocolate mouse

If we had to choose a chocolate specialty from the artisan baker Bologna, it would be the Sun of Oisans : a chocolate chip shortbread with successive layers of dark chocolate ganache, orange marmalade and candied orange slice. Nicolas Charpin, well known in Bourg-d'Oisans for his entirely homemade ice creams, recently started making chocolates. Wanting to fully master the production of his chocolate ice creams, he equipped himself with a mill to make his cocoa paste in order to create bars and chocolates that are all as good as each other. You will definitely fall in love!

Over the past 30 years, many skiers have inevitably succumbed to the tempting pastries of the Greedy Cat. Émilie Paris, long-time pastry chef at Little Polyte (1 star in the MICHELIN Guide) takes on a new challenge by taking over from Pascal Chat. She will continue with the classics: Oisans tart, chocolate cake, three chocolates, the Oisans slate, a small square of praline chocolate coated with blueberry or raspberry meringue to enjoy with a good coffee! Creative and inventive, it will bring its own delicacies and follies.
